Ingredients
250 gr. mother yeast
300 ml. room temp water
10 gr. honey
1/2 tbsp salt
460 gr. OO flower
The Build
- Add water to mixer
- Add mother yeast to water
- Add Honey
- Mix together until mix becomes like milk
- Add salt, mix to combine
- Mix slowly and add flour slowly to combine
- Mix 10-15 min. until he mixing bowl is clean
- Remove the dough and form a smooth ball
- Cover with wrap and let rest for 30-40 min.
- Form dough balls and let them rest in the proofing box for 4 hours, or until the balls have doubled in size.
